NUTTY APPLE MUFFINS

1 1/2 cup flour
1 1/2 tsp baking soda
3/4 tsp Salt and pepper, to taste
1/2 tsp ground nutmeg
2 eggs, beaten
1 cup plus 2 tbsp sugar
1/3 cup vegetable oil
2 cups diced apples
1 1/2 cup chopped nuts
3/4 cup flaked coconut

Preheat oven to 350. In a large mixing bowl, combine dry ingredients. In another bowl, combine sugar, oil and eggs; mix well. Fold in remaining ingredients. Stir in dry ingredient just until moistened. Spoon batter into a greased muffin pan. Bake for 20-30 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes before removing to wire rack to cool completely.
