** GLAZED CARROTS **

Category: Carrots

1 (2 lb) pkg baby carrots
3 tbsp butter
2 tbsp sugar
1/3 cup apricot jam
1/2 tsp hot sauce
1/2 tsp Salt and pepper, to taste
Garnish, chopped parsley

Arrange carrots in a steamer basket over boiling water. Cover and steam 8-10 minutes or until crisp-tender. Melt butter in a large skillet over low heat. Add remaining ingredients and cook, stirring constantly, until sugar dissolves. Stir in carrots and cook, stirring gently, 3 minutes or until carrots are glazed. Garnish. Serves 8
