GARLIC CATFISH FILLETS

2 lbs catfish fillets, rinsed and dried
1 egg, beaten
1 tbsp Worcestershire sauce
1 cup cornmeal
1/2 cup oil
2 tbsp butter
4 cloves garlic, peeled and left whole
1 lemon, cut into wedges
White pepper, to taste

Dip fillets in egg mixed with Worcestershire sauce and roll in cornmeal to coat well. Lay a single layer and set aside on waxed paper.

Meanwhile, heat oil and butter in a large skillet. Add the garlic and stir to blend flavors. Add the fillets, one at a time. Brown for 3 minutes on each side or until fish flakes easily with a fork. Serve with lemon wedges and sprinkle with pepper. Serves 4
