PUMPKIN STREUSEL MUFFINS

1/4 cup butter, softened
1/2 cup sugar
1/4 cup packed brown sugar
2/3 cup canned pumpkin
1/2 cup buttermilk
2 eggs
2 tbsp molasses
1 tsp grated orange peel
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp pumpkin pie spice
1/4 tsp salt

Streussel topping
1/3 cup flour
3 tbsp packed brown sugar and cold butter

Preheat oven to 375. Lightly grease muffin pans. In a mixing bowl, cream butter and sugars. Add pumpkin and next 3 ingredients. Mix well. Combine dry ingredients and gradually add to pumpkin mixture just until blended. Spoon batter into prepared muffin cups.

For topping, combine flour and brown sugar. Cut in butter until crumbly. Sprinkle over batter. Bake for 20-25 minutes or until toothpick inserted in center comes out clean. Remove to wire rack to cool. Cool for 5 minutes before removing muffins from pan and finish cooling on rack.
