FRIED HERB POTATOES

6 medium red potatoes, diced
2 tbsp olive oil
1/2 red onion, chopped
4 clove garlic, minced
1 tbsp fresh chopped basil
1 tsp fresh chopped rosemary and oregano
1 bunch baby spinach, rinsed and stems removed
2 tbsp red wine vinegar
Salt and pepper, to taste
Place potatoes in a large saucepan over medium heat and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and set aside.
Heat oil in a large skillet over medium heat. Saute the onion and garlic with the herbs until onion is just tender. Add the potatoes and saute until lightly browned. Cover with spinach and sprinkle with vinegar. Cover and cook on low until the spinach is tender.
Remove from heat and stir the mixture together. Season with salt and pepper. Serves 6
