FRESCATI POTATOES

Category: Hash Brown Potatoes/Casseroles

6-8 peeled potatoes, peeled and halved
4 slices bacon, chopped
1 medium onion, chopped
4 button mushrooms, sliced fine
1 1/4 cups light cream
1 cup chicken stock
1/2 cup grated parmesan cheese
Paprika
Oil

Preheat oven to 350. Lightly spray baking dish with cooking spray. Scatter the bottom with onion, bacon and mushrooms. Slice the potatoes, but keep them together as you place them in the dish on top of the onion mixture. Pour in stock, evenly sprinkle with cheese and pour cream over entire dish. Sprinkle with paprika. Bake for 1 hour, check with a knife, if still hard inside, cooked until tender. If the potatoes start to get overly browned while baking, cover with foil.
