ARTICHOKE AND ROASTED RED PEPPER DIP

2 tbsp butter
1 leek, sliced
2 (6.5 oz) jars marinated artichoke hearts, drained and chopped
4 tbsp mayonnaise
1 (7 oz) jar roasted red peppers, drained and chopped
3/4 cup grated parmesan cheese

Preheat oven to 350. Lightly grease a 8x8 inch baking dish. Melt butter in a saucepan. Saute diced leek until tender. Stir together all ingredients. Transfer to baking dish. Bake for 30 minutes or until lightly browned.
