CHOCOLATE PECAN PIE BARS

Crust
2 cups flour
1/2 cup sugar
1 cup butter, softened
1/4 tsp salt
Preheat oven to 350. Grease/spray a jelly-roll pan. Beat butter until creamy. Add flour, sugar, and salt, and continue mixing until the mixture resembles coarse crumbs. Press onto bottom of pan. Bake for 15 to 20 minutes or until lightly browned.
Filling
1 1/2 cups corn syrup
6 oz semi-sweet baking chocolate
1 1/2 cups sugar
4 eggs, lightly beaten
1 1/2 tsp vanilla extract
2 1/2 cups chopped pecans
In a large microwave-bowl, heat the corn syrup and chocolate for 90 seconds. Stir and heat another 60 seconds. Stir until chocolate has melted. Alternatively, heat the corn syrup and chocolate in a saucepan over low heat until chocolate has melted. Add sugar, eggs, and vanilla, and mix well. Stir in pecans. Pour filling mixture over crust and spread evenly.
Bake for 30 to 35 minutes or until center is almost set. Cool completely in the pan on a wire rack before cutting into bars.
