CUCUMBER AND TOMATO SALAD

2 cucumbers, peeled and sliced into 1/4 inch slices
3-4 medium-sized tomatoes, peeled and sliced into 1/4 inch slices
1.5 tbsp Balsamic Vinegar
1/4 c Good Olive Oil
1/2 tsp Italian Seasoning

On a dinner plate, place slices of cucumber in a circular pattern around the outer edge. Place a layer of sliced tomatoes. Alternate the layers until you reach the center of the plate. In a small container, mix the balsamic vinegar and Italian seasoning well. Whisk in the olive oil to make an emulsion. Drizzle the mixture over the salad.
