OATMEAL LAYERED BROWNIES

Category: Brownies/Blondies

Oatmeal Bottom Layer:
1/2 cup stick margarine (not the soft spread)
1/3 cup firm-packed dark brown sugar
1/2 cup flour
1 1/2 cup quick cooking oatmeal
1/8 tsp salt

Chocolate Topping:
3 oz unsweetened chocolate
1 1/4 cup sugar
3 large eggs
3/4 cup stick margarine (not the soft spread), cut into 1-inch pieces
1 1/2 tsp vanilla extract
3/4 cup flour
3/4 cup chopped walnuts

To make bottom layer: Preheat the oven to 350°. Cut the margarine into 1-inch pieces. In a food processor fitted with the metal blade, use about 10 on/off pulses to combine the margarine and the remaining until crumbly. Press into an ungreased 9 by 9-inch baking pan and bake in the center of the oven about 10 minutes or until lightly browned. Let cool about 5 minutes.

To make topping: Cut the chocolate into 1-inch pieces. In a food processor fitted with the metal blade, process the chocolate and sugar until finely chopped. Add the eggs, margarine pieces and vanilla and process until well combined. Use on/off pulses to incorporate the flour and nuts. Spread the mixture evenly over the oatmeal layer and bake in the center of the oven about 25 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before cutting.
