CRABMEAT BALLS

1 lb crabmeat
1 large onion, chopped
1/2 green bell pepper, chopped
1/4 cup chopped celery and parsley
2 tbsp minced garlic
1/2 cup chopped green onions (chopped to top)
1/4 cup butter
3/4 cup bread crumbs
1 (8 oz) pkg cream cheese, softened
1/2 tbsp Cajun seasoning
1/2 cup milk, optional
1 cup bread crumbs, to roll balls in
Melt butter and add chopped and minced vegetables and saute until tender. Add crabmeat and seasoning, simmer; stir until crabmeat is all separated, not lumpy. Add cream cheese; stir until melted and thoroughly blended. (Watch heat so that cream cheese will not scorch.) Add breadcrumbs, mix thoroughly, simmer 15 minutes stirring frequently. If mixture is becomes too dry, add milk. Make sure mixture is dry enough to roll into little balls. Roll mixture into about 1 inch balls. Roll in bread crumbs and place in oven at 300 for 10 minutes. Serve hot.
