APPLE BUTTER MUFFINS

1 3/4 cups self-rising flour
1/2 cup sugar
1/2 tsp ground cinnamon
1/2 cup finely chopped apple
3/4 cup buttermilk
1/2 cup apple butter
1/2 cup unsalted butter, melted
1 large egg, lightly beaten
1/4 cup finely chopped cinnamon-glazed walnuts and almonds

Preheat oven to 350. Lightly grease a 24-cup mini muffin pan; set aside. In a medium bowl, combine flour, sugar, and cinnamon. Stir in apple.

In a separate bowl, combine buttermilk, apple butter, melted butter, and egg. Add buttermilk mixture to flour mixture, stirring just until dry ingredients are moistened. Spoon batter into prepared muffin cups. Top with chopped nuts. Bake 23 to 25 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pan 5 minutes before removing. Serve with additional apple butter, if desired.
