PEANUT BUTTER MONSTER COOKIES

2 (12 oz) jars extra crunchy peanut butter
1 1/4 cups butter shortening or 1 1/4 sticks butter shortening sticks
2 cups sugar
2 cups firmly packed brown sugar
2 tbsp vanilla extract
9 cups quick rolled oats
3/4 cup Self Rising Flour
1 tbsp plus 1 tsp baking soda
1 tbsp baking powder
3/4 cup water
1 1/3 cups semi-sweet chocolate chips

Heat oven to 350. Combine peanut butter, shortening, sugar, brown sugar and vanilla in extra large bowl. Beat at medium speed of electric mixer or mix with spoon until well blended.

Combine oats, flour, baking soda and baking powder in large bowl. Add to peanut butter mixture alternately with water, beginning and ending with dry ingredients. Stir with spoon until blended. Stir in chocolate chips. Shape into 1 1/2-inch balls. Place 2 inches apart on ungreased baking sheet. Flatten slightly. Bake 8 to 10 minutes or until light brown around edges. Cool 10 to 15 minutes on baking sheet before removing to cooling rack.

Yield: 6 dozen
