BEEF TENDERLOIN STEAKS WITH RED WINE-TARRAGON SAUCE

1/2 cup low salt beef broth and dry red wine
1 tsp flour
1/2 tsp salt and dried tarragon
1/4 tsp pepper
Cooking spray
4 (4 oz) beef tenderloin steaks, 1 inch thick
4 tbsp chopped shallots
2 tsp chopped parsley
Combine first 6 ingredients, stirring with a whisk.
Heat a skillet with cooking spray.  Add steaks, and cook 3-5 minutes on each side to desired degree of doneness.  Remove from pan and keep warm.  Add shallots to pan, and saute 1 minute.  Add broth mixture; bring to a boil.  Cook until reduced to 1/4 cup, about 1 minute.  Serve sauce with steaks.  Sprinkle with parsley.  Serves 4
