PEANUT BUTTER CAKE

1 box plain yellow cake mix
1 1/2 cups water
1/3 cup smooth peanut butter
1/3 cu vegetable oil
3 large eggs
1 tsp vanilla extract
Chocolate Frosting (recipe follows)
1/2 cu chopped dry-roasted peanuts, for garnish

Preheat oven to 350. Grease and flour 2 (9 inch) round cake pans. Set aside.

In a large mixing bowl, beat the cake mix and next 5 ingredients on medium speed for 3 minutes. Divide batter evenly between the prepared pans. Bake for 25-30 minutes.

Divide batter evenly between pans and bake for 25-30 minutes or until cakes test done. Cool cake in pans for 10 minutes. Remove and cool cakes completely on wire racks. Fill and frost the sides and top of cake with frosting. Garnish

Chocolate Frosting
2/3 cup unsweetened cocoa powder
6 tbsp boiling water
1/2 cup softened butter
3 cups confectioners sugar, sifted
1 tsp vanilla extract

In a large bowl, combine cocoa and water; mix well. Add the butter and blend for about 30 seconds. Add sugar and vanilla and beat until light a fluffy, adding more powdered sugar or water if needs to acquire desired spreading consistency.
