2 lbs ground beef
2 slices buttered bread (toasted or untoasted) broken or cut into crumbs (soaked in milk)
1/2 of one small green and red bell peppers, chopped finely
1/4 to 1/2 cup chopped yellow onion and green onions
1/2 small can tomato sauce
2 egg yolks beaten together slightly
Creole seasoning to taste or 1 packet of Meatloaf Seasoning Packet.
2 tbsp chopped garlic
Salt and black pepper to taste
1 tbsp Worchester Sauce
1 finely grated carrot

Mix all ingredients and shape into loaf. Make sure and do not overwork the meat or you will have a tough meatloaf. Bake at 325 for 1 hour or until done.

Gravy: I do not have an exact recipe for my gravy but I use Wondra Flour, Pan Drippings. Beef Bouillon cube, Water or broth, Worchester sauce, black pepper, salt or Accent, Creole Seasonings, Louisiana hot Sauce, chopped garlic and sliced sweet onion rings. Brown flour in drippings or butter to make a paste to desired gravy color, add onion rings and season heavily with seasonings, garlic, hot sauce, and beef bouillon, add water or broth and thicken to gravy.
