SAUSAGE STUFFED FRENCH BREAD

1 (1 lb) loaf French bread
1/2 lb bulk pork sausage and ground chuck
1 medium onion, chopped
1 cup shredded mozzarella cheese
1 egg
1/4 cup chopped fresh parsley
1 tsp Dijon mustard
1/4 tsp fennel seeds, salt and pepper
2 tbsp butter
1 clove garlic, crushed
Cut off ends of bread and set ends aside. Hollow out center of loaf with a long serrated bread knife, leaving a 1/2 inch thick shell. Position knife blade in food processor bowl; add bread removed from inside loaf. Process to make coarse crumbs. Set bread shell and crumbs aside.
Cook ground meat and onion in a skillet until browned and crumbled; drain well. Add 1 cup reserved breadcrumbs, cheese, and next 6 ingredients, mixing well.
Spoon mixture into bread shell and replace loaf ends, securing with toothpicks.
Melt butter in a small saucepan; add garlic and cook for 1 minute. Brush butter mixture over loaf. Wrap loaf with foil, leaving open slightly on top. Bake at 400 for 20 minutes or until thoroughly heated and cheese is melted. Cut into 4 pieces.
