TOMATO BASIL BRUSCHETTA

8 diced ripe plum tomatoes
4 cloves garlic, minced and divided
6 cured black olives, minced
1/4 cup diced red onion
1/4 cup balsamic vinegar
1/3 cup olive oil
1 tbsp chopped fresh basil
Salt and pepper, to taste
French baguette
Olive oil
In a bowl, combine tomatoes, 2 cloves minced garlic, olives and onion. Toss together well.
In a small bowl, whisk together the vinegar, oil and basil. Add to the tomato mixture and toss together well. Season to taste with salt and pepper.
Slice baguette into 3/4 inch slices. Lightly brush with olive oil and broil until crispy and gold brown on both sides, flipping once. Quickly spread slices of remaining garlic and spoon tomato mixture onto the slices of toast and serve.
