ASPARAGUS AND SHRIMP PASTA

8 oz spaghetti, cooked al dente
1/2 cup dry white wine
1/2 tsp dried oregano
1/3 cup grated parmesan cheese
1/4 cup chopped parsley
1/4 tsp salt
1/8 tsp pepper
1 cups chicken broth
1 lb asparagus, trimmed, peeled and cut into 2 inch pieces
1 lb medium shrimp, shelled and deveined
1 tbsp cornstarch
2 carrots, cut into matchstick strips (1 cup)
2 cloves garlic, minced
2 tbsp olive oil, divided
4 green onions, cut into matchstick strips (about 1/2 cup)

While pasta is cooking, in a large skillet heat 1 tbsp oil over medium heat. Add green onions and garli, stirring frequently, cook 1 inute. Add shrimp; cook, stirring until pink, about 3 minutes. Remove from heat.

Heat remaining oil in skillet and saute asparagus and carrots, stirring frequently, coook 3 minutes.

In a small bowl, stir broth, wine, parsley, cornstarch and seasonings. Gradually stir intil skillet, stirring constantly. Bring to a boil and boil for 1 minutes. Stir in shrimp mixture; heat through. In a serving bowl, toss spaghetti and shrimp mixture. Sprinkle with cheese. Serves 4
