CHICKEN BURRITO STACK

Category: Chicken

1 medium red and white onion, quartered and thinly sliced (about 1 1/4 cups)
1 red and green bell peppers, thinly sliced
2 cloves garlic, minced
3 cups shredded cooked chicken
1 (10 oz) can diced tomatoes and green chilies, undrained
1/2 tsp salt and ground cumin
4 (10 inch) flour tortillas
2 cups grated Mexican cheese blend
1/4 cup chopped fresh cilantro, garnish

Coat a large skillet with cooking spray over medium high heat. Add onions and saute until beginning to brown. Add peppers and garlic, cook for 5 minutes, stirring occasionally. Add next 5 ingredients; cook about 7 minutes or until liquid evaporates, stirring ocasionally.

Preheat oven to 375. Grease a large baking sheet or pizza pan. Place one tortilla on baking sheet. Spread with 1/3rd chicken mixture; sprinkl with some cheese. Repeat layer two more times; top with remaining tortilla and cheese. Bake 10-15 minutes or until stortill stack is heated through and cheese is melted. Cut into wedges and garnish. Serves 6
