BORDEAUX-STYLE MUSHROOMS

3/4 lb crimini mushrooms
3 tbsp light olive oil
2 tbsp butter
2 fresh shallots, finely chopped
1/4 cup fresh fine breadcrumbs
3 tbsp chopped parsley
1 1/2 tbsp chopped chives
Salt and pepper, to taste
Trim stem of mushrooms and cut into quarters. Heat the oil and butter in a large skillet until the butter has stopped foaming. Add the mushrooms and saute over moderate heat for 3-4 minutes. Season with salt and pepper. Add the shallots and the bread crumbs. Stir and continue cooking for an additional 2-3 minutes. Stir in parsley and chives. Serve.
