DOVER TOAST

3 eggs
1 cup cream
1 tsp vanilla
1 tsp cinnamon or grated orange zest
6 English muffins
Fresh fruit for garnish
Beat eggs; add cream vanilla and cinnamon or grated orange zest; beat well. Set aside.
Split muffins with a fork. Prick each half with the fork and soak well in the egg mixture. Place about 2 tbsp butter in in a lightly oiled, hot skillet.
When the butter is melted and just sizzling, place the muffin halves in the pan and cook over medium-low heat, so that the muffins cook through slowly. DO NOT FLATTEN WITH A SPATULA. Turn once, cooking until golden on both sidea. Sper each person 2 halves and garnish with fresh fruit. Serve immedialy with fruit syrups and butter. Serves 6
