SWEDISH BAKED APPLE DESSERT

1/2 cup butter, divided
1 (10 oz) pkg shortbread or oatmeal cookies, crushed
1/2 cup plus 1 tbsp sugar
2 tsp cinnamon
8 cups sliced peeled apples
1 tbsp lemon juice
1/3 cup chopped almonds

In a skillet, melt 6 tbsp butter. Add cookie crumbs, 1/2 cup sugar and cinnamon; cook for 3 minutes. Place crumbs in a bowl and set aside.

In the same skillet, combine remaining butter, apples, remaining sugar and lemon juice; mix well. Cover and cook over medium heat for 10 minutes or until apples are tender, stirring frequently. Heat oven to 375.

In a casserole, layer half the apples and half the crumb mixture. Repeat. Sprinkle with almonds. Bake for 25-30 minutes or until golden brown. Serve warm with ice cream.
