ITALIAN MEATLOAF MUFFINS

1 tbsp olive oil
1 red pepper, seeded and minced
1 small onion, minced
3 cloves garlic, minced
1 lb 90 percent lean ground beef
1/2 cup egg substitute such as Egg Beaters
1 cup quick-cooking oats
1/2 cup parmesan cheese
1 tbsp Worcestershire sauce
1 tbsp balsamic vinegar
2 tbsp fresh basil, chopped
1 tbsp fresh parsley, chopped
1 tsp salt
1/2 cup marinara spaghetti sauce
Cooking spray
Cut baking time and control portion size easily with meatloaf in a muffin tin.

Heat olive oil in a skillet over medium heat and add red pepper, onion and garlic. Sauté until just softened, remove to a plate and cool.
When pepper-onion mixture is cool, combine all remaining ingredients except marinara sauce. Divide meat mixture evenly in 12-muffin tin that has been coated with cooking spray. Spread marinara sauce evenly over each meatloaf muffin. Bake for 22 to 30 minutes, or until meat no longer is pink.
Remove from oven and let rest for 5 minutes before serving. Makes 6 servings.
