MARINATED SALMON WITH LEMON TARRAGON SAUCE

Category: Seafood and Fish - Grilled

1/4 cup lemon juice and olive oil
2 clove garlic, minced
1/2 tsp salt
1/4 tsp pepper
1 lb salmon fillet, 1 inch thick
2/3 cup sour cream
1/4 cup milk and minced green onions
1 tsp tarragon leaves
1/4 tsp salt

Combine first 4 ingredients in a shallow pan. Mix well. Add salmon; turn twice to coat with marinade. With salmon skin-side up in baking dish, cover tightly and refrigerate 2 hours. Combine remaining ingredients in a small bowl; mix well. Cover and refrigerate until ready to serve.

Cut salmon into 4 serving pieces. Place on grill, skin side down; lower lid. Grill until 3 minutes. Turn and grill until fish begins to flake when tested with a fork. Servehot with chilled sauce over each piece.
