APRICOT GLAZED PORK CHOPS

1 cup apricot jam
3 tbsp cider vinegar
1 tbsp plus 1 tsp soy sauce
2 tsp grated fresh ginger
2 clove garlic, minced
1/4 tsp cayenne pepper
4 pork chops, cut 1 inch thick
2 tsp oil
Salt and pepper
In a small pan, combine jam and vinegar. Over low heat, cook until jam melts. Stir the mixture constantly. Add the next 4 ingredients. Remove from heat and cool, then pour into a bowl and refrigerate until ready to use.
Brush pork chops lightly with oil. Sprinkle with salt and pepper and place in a resealable bag and refrigerate until read to cook. Preheat grill to medium-hot fire. Cook chops for 3 minutes on each side. Brush glaze on one side, turn chops and cook 2-3 minutes. Brush glaze on other side and cook 2-3 minutes. Brush again with glaze before serving. Serves 4
