APPLE-SMOKED PORK WITH PEPPER AND ONION

Category: Pork I - Tenderloins and Roasts

4 cups applewood chips
2 (1 lb) pork tenderloins
1 tsp garlic salt
1 small red or green bell pepper, cut into 2 1/2 inch pieces
1 small onion, cut into 1/4 inch slices

Cover chips with water and soak for 30 minutes. Drain. Prepare and heat smoker using wood chips. Sprinkle pork with garlic salt. Make diagonal cuts across pork at 1 inch intervals to within 1/2 inch of bottom of pork. Insert bell pepper and onions pieces alternately in cuts in pork. Cover and smoke for 3 hours or until meat thermometer reads 160. Serves 8
