BOILERMAKER SAUCE

2 tbsp oil
1 medium onion, finely chopped
2 large garlic cloves, minced
1 (12 oz) bottle chili sauce
2/4 cup beer
3 tbsp cider vinegar
3 tbsp bourbon whiskey
1 1/2 tsp Worcestershire sauce
1/2 tsp hot pepper sauce
Heat oil in a saucepan. Add onion and garlic, saute until tender, about 8 minutes. Reduce heat. Add remaining except the hot sauce. Simmer until 2 cups, stirring occasionally, about 25 minutes. Stir in hot pepper sauce. Can be made up to 1 month ahead. Cover; chill. Makes about 2 cups.
