1 1/4 lbs boneless, skinless chicken breasts, cut into pieces
1 1/4 cups zesty Italian-style salad dressing, divided
1 red pepper and small red onion, cut into 1 inch pieces
6 oz small mushrooms

In a bowl, toss chicken with 1 cups dressing and marinate for 15-20 minutes. Preheat grill and skewer pieces of chicken and vegetables. Brush with reserved dressing. Grill kabobs for about 6-8 minutes. Turn every minute or so for evenly cooking and brush with reserved marinade. Serves 4
