LEMON CREAM CUPCAKES

1 cup butter, softened
2 cups sugar
3 eggs
2 tsp grated lemon peel
1 tsp vanilla extract
3 1/2 tsp cups flour
1 tsp baking soda
1/2 tsp baking powder and salt
2 cups sour cream
In a mixing bowl, cream butter and sugar. Beat in eggs, one at a time. Add lemon peel and vanilla; mix well. Combine dry ingredients; add to creamed mixture alternately with sour cream (batter will be thick). Fill greased or paper-lined muffin cups with 1/4 cup of batter. Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove to wire racks to cool completely.
Lemon Cream Cheese Frosting
4 oz cream cheese
1/4 cup butter, softened
1 cup confectioners sugar
2 tbsp lemon juice
2 1/4 cups confectioners sugar
4 drops yellow food coloring
Beat cream cheese and butter in a bowl until combined. Beat in confectioners’ sugar and lemon juice. Beat in 2 1/4 to 2 1/2 tsp cups more of confectioners sugar till frosting is of spreading consistency. Stir in a few drops of yellow food coloring.
Note: I added a bit more lemon juice to make it extra lemony; then add just add a little more confectioners sugar.
