HEAVENLY LEMON DESSERT

1 dozen eggs, separated
1 1/2 cups lemon juice
3 cups sugar
2 pkg unflavored gelatin soaked in 1/2 cup cold water
2 angel food cakes, broken into bite-sized pieces
1 pint whipped topping

Place yolks, lemon juice and 2 cups sugar on top of a double boiler. Beat continuously until mixture cooks. When thickened, add gelatin mixture. Set aside to cool to room temperature.

In a large bowl, beat egg whites until stiff, beating 1 cup of sugar into them. Fold into lemon mixture. Fold cake pieces into mixture. Spread in an oblong pan and chill, preferably overnight. Add whipped topping before serving. Serves 25
