ROASTED RED PEPPER DIP I

1 small red onion, chopped
1 tsp olive oil
1 (7 oz) jar roasted red peppers, drained and diced
2 cups shredded Monterey Jack cheese
1/2 cup grated parmesan cheese
1 tsp basil
1 (8 oz) pkg cream cheese, softened
1 cup mayonnaise

2 clove garlic, minced
1 tbsp prepared Dijon-style mustard

In a skillet, caramelize the onion in the olive oil. Preheat oven to 350. Mix the onion with the remaining ingredients and add to a casserole dish. Bake for 20-25 minutes, or until bubbly and lightly browned. Serve warm.
