CHUCK WAGON STEAK WITH MUSHROOM AND BRANDY GRAVY

1 1/2 lbs round steak, pounded 1/4 inch thick or 4 cubed steaks

Gravy
2 tbsp butter
1/2 yellow onion, chopped
1 cup sliced mushrooms
1/2 cup dry white wine
1 1/2 cups beef broth
1 1/2 tbsp cornstarch
2 tbsp brandy

Cook steaks in a little butter or olive oil. While cooking, prepare gravy in a saucepan by melting the butter and sauteing the onions and mushrooms until soften. Pour in the wine and 1/2 of the broth and stir.

Dissolve the cornstarch in the remaining broth, stir into the sauce and cook, stirring constantly, until the gravy thickens. Remove the pan from the heat and stir in the brandy. Pour over the steaks and serve. Serves 4
