Shelly's Recipe

CAJUN DIRTY RICE

1 lb ground beef and sausage
1 onion, finely chopped
1 (8 oz) pkg dirty rice mix
2 cups water
1 (10 oz) can diced tomatoes with green chili peppers
2 (15 oz) cans kidney beans, drained
Salt and pepper, to taste

In a skillet, brown meats and onion; drain. In a 2 quart saucepan, combine rice mix and 2 cups water. Add diced tomatoes and beans. Bring to a boil; add meat mixture. Season with salt and pepper. Return to a boil, reduce heat, cover, stir occasionally. Cook 25 minutes or until rice easily fluffs with a fork. Serves 8
