CASSEROLE DE MEXICANA

1 lb ground chuck
1 pkg taco seasoning mix
1 tsp seasoned salt
1 cup tomato chunks
2 cups tomato sauce
1 (4 oz) can diced green chilies
1 cup cottage cheese
2 eggs
10 each corn tortillas
2 cup Monterey jack cheese

Brown meat in a skillet and stir until well browned, drain well. Stir in taco seasoning mix, seasoned salt, tomatoes, tomato sauce, and chilies; mix well. Bring to a boil, reduce heat, and simmer slowly for 10 minutes.

Combine cottage cheese and eggs in a small bowl-mix well spread half of the beef mixture in a casserole. Top with half of the tortillas. Sprinkle with half of the grated cheese. Repeat layering with the remaining ingredients. Remove from oven, allow to rest for 10-15 minutes, before cutting. Serve hot.
