SALMON MARINARA WITH ANGEL HAIR PASTA

8 oz salmon, diced
1/2 cup cooked angel hair pasta
Heavy cream
2 tbsp olive oil and white wine
1 clove garlic, minced
Parsley
Salt and pepper, to taste
2 oz marinara sauce
Grated Romano cheese

In a saute pan, heat garlic and oil, add basil. Before garlic starts turning brown, and after translucency, add diced salmon. Gently cook, turning as necessary for 2-3 minutes, until salmon turns pink.

Add with wine and bring to a boil. Add heavy cream and marinara sauce, toss, add pasta and toss until liquid is absorbed. Heat may need to be adjusted. Toss and season with salt and pepper. Garnish with parsley and Romano cheese. Serves 1-2
