SALMON BAKED WITH PECAN CRUNCH CRUST

2 tbsp Dijon mustard and melted unsalted butter
1 tbsp plus 1 tsp honey
1/4 cup bread crumbs and finely chopped pecans or walnuts
2 tsp parsley
4 (6 oz) salmon fillets, thawed if frozen
1 lemon, cut into wedges

Preheat oven to 450. Mix first 3 ingredients in a bowl; set aside. Mix crumbs, pecans and parsley in another bowl. Season the salmon with salt and pepper and place on a lightly greased baking sheet.

Brush each fillet with mustard blend and top with a spoonful of bread crumb mixture. Bake 10 minutes per inch of thickness or until salmon flakes when tested with a fork. Serve with lemon wedges. Serves 4
