ITALIAN SAUSAGE, PEPPERS AND ONIONS

8 Italian sausages, hot or mild
2 green and red bell peppers, seeded and cut into strips
2 sweet onions, cut into strips
2 clove garlic, minced
Salt and pepper to taste

Preheat oven to 350. In a Dutch oven, add enough olive oil to coat the bottom of the pan. Add the vegetables and seasonings. Place the sausage on top and cover lightly with foil. Bake for 45 minutes. Remove foil and bake another 7-8 minutes. Remove from oven and serve on soft sausage rolls. Serves 4-6
