HONEY GLAZED CHICKEN BREAST SANDWICH

4 boneless chicken breasts
4 tbsp honey
1/3 cup orange juice
1 tsp orange zest
1/4 tsp grated ginger
1/2 tsp minced garlic
3 tsp Creole mustard
1/2 tsp salt
1/4 tsp black pepper

In a medium mixing bowl, combine all ingredients except chicken and blend well. Pour mixture in a plastic zipper bag. Add chicken breasts, turning to coat all sides. Refrigerate at least 30 minutes, but flavor is enhanced with longer marinating time.

Lightly grease grill rack. Remove chicken from marinade and discard remaining marinade. Grill chicken on medium heat until done, turning occasionally. Serve on bread with lettuce and tomatoes.
