GLAZED PORK MEDALLIONS

Category: Pork

3 lb pork tenderloin, cut into 1 inch slices
8 tbsp maple syrup
8 tsp balsamic vinegar and Dijon mustard
4 tsp olive oil

Place slices of pork between wax paper and flatten to 1/2 inch thickness. Whisk the next 3 ingredients together. Heat oil in a skillet and brown pork for 2 minutes on each side. Reduce heat to low, pour maple syrup mixture over pork, cover with a lid and cook 2 minutes. Spoon sauce on top. Serves 8
