LEMON CHEESECAKE

Crust
20 graham crackers, crushed
1 ½ tsp sugar
½ cup butter, melted

Filling
2 (8 oz) pkg cream cheese, at room temperature
1 cup plus 2 tbsp sugar
2 tbsp flour
1/4 tsp salt
Juice of 1/2 lemon

1 tsp grated lemon zest
4 egg yolks, well beaten
1 cup sour cream
4 egg whites, stiffly beaten

Lemon marmalade (optional)

For crust, stir together graham cracker crumbs, sugar and butter by hand. Press into bottom of greased 9-by-9-inch baking pan or springform pan.

Preheat oven to 325. For filling, blend cream cheese, sugar, flour, salt, lemon juice, and lemon zest until smooth. Add egg yolks and sour cream, blending well. Fold in egg whites. Pour into crust; bake for 45 minutes or until done. Cool before removing from pan. Cool thoroughly. Top with lemon marmalade to taste. Serves 9-12.
