CHOCOLATE BOURBON BALLS

2 (12 oz) boxes vanilla wafers, crushed
12 oz semi-sweet chocolate chips
6 tbsp corn syrup
1 cup bourbon whiskey
1 cup sifted confectioners sugar
2 cups finely chopped nuts
Sugar, to coat

Place wafer crumbs, confectioners sugar and chopped nuts in a large mixing bowl; stir to combine.

Measure whiskey in a measuring cup and add syrup. Melt chocolate and add whisky mixture to chocolate; stirring well. Immediately add chocolate mixture to dry mixture and mix well with a wooden spoon. Let mixture sit for about 30 minutes at room temperature.

For into small balls, rolling in palms to smooth surface. Roll lightly in tray of sugar. Place in a container, separating layers with waxed paper and let season in sealed container for several days before serving.
