TOFFEE BARS

Crust
1/4 cup unsalted butter and shortening
1/2 cup packed brown sugar
1 cup flour

Filling
2 eggs
1 cup packed brown sugar
2 tbsp flour
1 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1 cup shredded coconut and slivered almonds

Preheat oven to 350. Crust: Beat first 3 ingredients until smooth. Mix in the flour to a coarse grain and press onto bottom of a lightly oiled 13x9 inch baking pan. Bake for 10 minutes or until edges begin to brown.

Filling: In a large bowl, whisk together first 6 ingredients until creamy. Fold in coconut and almonds and pour over crust. Continue baking for 30-45 minutes or until center is set. Cool on a rack then slice into finger-size portions. NOTE: Good with melted chocolate drizzled over top before cutting.
