1 pkg frozen chopped spinach
1/2 large onion, minced
1/4 cup parmesan cheese
1 1/4 cup herb stuffing mix
2 eggs
4 tbsp butter, melted
A couple of drops of Tabasco sauce, optional
Cook spinach; drain well. Combine all ingredients. Chill overnight. Form into 1 inch balls. Freeze or refrigerate. Bake at 300 for 30 minutes until golden brown.
