6 oz mozzarella
1/4 cup olive oil
1 tsp dried herbs
1 clove garlic, minced
Hot red pepper, salt and pepper
1 1/2 tsp lemon juice
Oil-cured olives, sun-dried tomato halves or roasted red pepper strips

Drain cheese; cut into cubes. Combine next 7 ingredients and toss gently to coat. Cover and refrigerate at least 12 hours or up to 3 days.

To serve, let cheese return to room temperature. Using a slotted spoon, mound cheese in center of a serving dish and surround with remaining ingredients and crostini.
