GARLIC AND HERBED TOMATO BASIL BRUSCHETTA

1 large French baguette, sliced into 30 (1/4 inch thick)
2 oz chopped garlic
4 oz olive oil
30 whole basil leaves
12 ripe tomatoes, finely chopped
2 oz balsamic vinegar
1 tsp salt
1/2 tsp pepper
1 oz chopped basil
Preheat oven to 350. Brown bread slices until golden brown. Saute 1 oz chopped garlic in 2 oz olive oil. Brush on toast. Then place a whole basil leaf on each piece of toast.
In a mixing bowl, combine remaining ingredients. Carefully top each bruschetta with tomato mixture. Serve at room temperature soon after preparing.
