CHICKEN FAJITAS

4 boneless, skinless chicken breasts
2 tsp vegetable oil
1 large onion, sliced
2 tsp chili powder
1 tsp garlic and onion powders
1 green and red bell pepper, cut into 1/4 inch strips
1 lime
8 (6 inch) flour tortillas
Topping: chopped green onion, chopped tomatoes, salsa shredded cheese, sour cream and/or guacamole

Heat oil over medium heat in a 12 inch skillet. Add onion to the skillet, stirring occasionally. While the onions cook, measure the spices into a resealable bag.

Slice the chicken across the grain into 1/4 inch strips and place in the bag. Coat the chicken with the spices and add to the skillet.

Raise the heat to medium-high, add peppers to the skillet, raise the heat to high. Let the mixture cook, stirring from time-to-time, until the peppers are crisp-tender and the chicken is not pink in the center, about 3-5 minutes.

When the chicken is done, remove the skillet from the heat, cut the lime in half and squeeze the juice over the skillet. Stir well. Just before serving, heat the tortillas according to package directions. Serve with toppings.
