CRUNCHY PECAN PORK CHOPS

6 (3/4 inch thick) pork chops
2 tbsp Dijon mustard and mayonnaise
1 tbsp oil
1/2 cup chopped pecans
1/2 tsp salt
1 slice bread, torn into pieces
1 tbsp dried parsley

Cut outer edge of fat on pork diagonally at 1 inch intervals to prevent curling but do not cut into meat. Mix next 3 ingredients together. Place remaining ingredients in a food processor, pulsing, until pecans are finely chopped.

Set oven to broil. Spread mustard mixture over pork. Coat evenly with pecans mixture. Place pork on rack in broiler pan and broil 6 inch from heat about 10 minutes on each side or until brown. Serves 6
