2 tsp Cajun or Creole seasoning
1 lb pork tenderloin
2 medium sweet potatoes, peeled
4 small zucchini
1 1/2 cups frozen small whole onions
2 tbsp butter, melted
1/2 tsp dried thyme leaves
1/4 tsp salt
Preheat oven to 425. Rub seasoning into pork and place on a jelly-roll pan. Insert a meat thermometer horizontally into center of the thickest part of the pork.
Cut potatoes and zucchini lengthwise into halves and place them along with the onions around the pork. Drizzle with butter. Sprinkle with thyme and salt.
Roast uncovered about 35 minutes or until thermometer reaches 160 degrees. Loosely cover pan with foil and let stand 10 minutes. Cut pork into thin slices and serve with vegetables. Serves 4
