BOURBON PORK TENDERLOIN

1 cup confectioners sugar
2 tbsp bourbon or apple cider
1 tbsp water
2 tsp vanilla extract
1 1/2 - 2 lb pork tenderloin
1/2 tsp salt
1/4 tsp pepper
Preheat oven to 350. Line an 11 x 7 inch baking dish with foil and coat with cooking spray. In a medium bowl, combine remaining ingredients; mix well and set aside.
Season tenderloin with some salt and pepper; place in baking dish. Cover with 1/4 of sugar mixture and roast for 4 to 5 minutes. Remove from the oven and spoon remaining sugar mixture over pork.
Roast 5-10 minutes or until no pink remains. Remove from pan and let rest at least 10 minutes before cutting into 1/4 inch thick slices and serve with sauce from pan.
